Bread on the Roof Next Door.

I'd see woman in the photos drop off a loaf where I could see things in the middle of the rooftop, then head back out of sight. I did not understand this behavior. Was this some sort of ancient Polish breadmaking technique, a process to give a perfect crust or rich flavor to bread by exposure to the elements and the radiant light of the sun?

No. In a few minutes I saw that it was only cosmetically preservative. She, in that corner, was laquering the bread with a brush and setting it out to harden. These are loaves for the display shelf. Or, perhaps, this is a Polish breadmaking technique I still don't understand.
